Spice up croquettes with your own flavors...
Cook and mash potatoes (about 1kg) with a fork. Fix a purree (you can also use an instant puree pack). Add some hot milk (not too much!), 1 egg, salt, pepper, 1 pinch of nutmeg, flour and vegetable (I usually buy a pack of small cubed, frozen - not canned! - vegetable mix and steam it before adding to the potato puree). You can also prepare your own, preferred vegetable. At last stir in grated cheese (mozzarella).
With your fingers shape croquettes. If the potato-vegetable-cheese-mix is too sticky add some more flour. Wrap in bread crumbs mixed with seasame seeds. Fry in butter or margarine until browned.
Allow your creativity free rein and fix croquettes by adding your favorite ingredients to the basic potato-mix. Substitute ingredients or add others like: herbs, bacon, ham, peas, seafood or other kinds of vegetable. Serve with mixed salad, yoghurt, sour cream or tartar sauce.
